Buffet Menu on Tuesdays showcases Karnataka food at Howard Johnson Bengaluru Hebbal.

The American brand hotel wants to bring in local flavour in a big way. ‘Namma HoJo’ is what the hotel calls the Tuesday buffet at Nest, its all-day-dining restaurant.

“We want to promote regional food with seasonal vegetables,” says Executive Chef Mani Mohan Pathak.

He explains:

A live dosa counter is where one can have freshly made ragi dosas, benne dosa and Mysuru masala dosa with piping hot sambhar and a variety of chutneys.

Starters are masala vada, aloo bonda or maddur vade.

Lunch is Karnataka’s speciality bisi bele bath, chitranna and mosaru anna. Ragi mudde with soppy saaru and chicken or mutton ghee roast is also served.

There is also Kori ghasi, sambhar and white rice, salads washed down with buttermilk.

Stating that local ingredients are used, Pathak says rava kesari, payasam, kesari bath, chiroti badam haalu, mysuru pak, dharwad peda, obattu and holige are a mix of sweets for dessert.
